IL POLPO ALLA PALERMITANA DELLA MIA AMICA GRAZIELLA DI TERMINI IMERESE

Dalla Sicilia, la mia amica Graziella P. di Termini Imerese mi manda questa spettacolare insalata di polipo con i frutti di mare e le verdure fresche! Ovviamente è un piatto più estivo, ma io lo proporrò come antipasto per una cena  fra amici... sono sicura di fare un figurone!!!

INGREDIENTI PER 4 PERSONE:

1 polpo da circa 1 kg
2 carote
2 coste di sedano
1 cipolla bianca
3 bastoncini di surimi aromatizzati al granchio
300g fra cozze e vongole
olio, sale, pepe
il succo di un limone

Fate lessare il polpo in acqua fredda salata, per una quarantina di minuti da che l'acqua ha preso il bollore. Nel frattempo fate aprire le cozze e le vongole in una padella con il coperchio e poco olio: sgusciatele e fatele raffreddare da parte. Lavate le verdure e tagliatele a pezzi e disponetele in una ciotola capiente. Tagliate anche i bastoncini di surimi ed aggiungeteli alle verdure insieme ai frutti di mare a temperatura ambiente. Quando il polpo sarà ben cotto, scolatelo e tagliatelo a pezzi: una volta raffreddato aggiungetelo all'insalata di verdure e regolate di sale; pepate a piacere, irrorate con il succo di limone e con un generoso filo di olio extravergine di oliva!

In estate è preferibile far riposare una mezz'oretta in frigo prima di servire e questa meravigliosa insalata di polpo può essere un invitante e fresco piatto unico, mentre in inverno può diventare un originale antipasto da proporre con un bel vino fresco e frizzante!!!

THE OCTOPUS PALERMITANA OF MY FRIEND TERMS OF GRAZIELLA IMERESE


From Sicily, my friend Graziella P. Termini Imerese sends me this spectacular octopus salad with seafood and fresh vegetables! Obviously it's a summer dish, but I propose as an appetizer for a dinner with friends ... I'm sure to make a great impression!

INGREDIENTS FOR 4 PEOPLE:

1 octopus of about 1 kg
2 carrots
2 stalks of celery
1 white onion
3 sticks of surimi crab flavored
300g between mussels and clams
oil, salt, pepper
the juice of one lemon

Boil the octopus in cold salted water for about forty minutes from the water took a boil. In the meantime, please open the mussels and clams in a pan with a lid and a little oil: peel and let them cool aside. Wash the vegetables and cut them into pieces and place in a large bowl. Also cut the sticks of surimi and add them to the vegetables along with seafood at room temperature. When the octopus is well cooked, drain and cut into pieces, once cooled, add it to the salad vegetables and season with salt, pepper to taste, sprinkle with the lemon juice and a generous drizzle of extra virgin olive oil!

In the summer it is best to rest for half an hour in the fridge before serving this wonderful octopus salad can be an inviting and fresh dish, while in winter it can become an original appetizer to serve with a nice wine fresh and bubbly!
